Real Good Banana Bread

My son loved this bread so much he asked me to make it for his birthday!
 
1 cup butter
1 1/2 cups + 2 TBS sugar
3 whole eggs
1 tsp vanilla extract
3-4 very ripe bananas
4 cups + 2 TBS flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 1/2 cups of natural sour cream or plain Greek yogurt
1 cup chopped nuts, optional

Preheat oven to 350 degrees F.  Grease and Flour a bundt pan or 2 loaf pans.
Cream butter and sugar together. Add eggs one at a time, beating for a few seconds after each addition. Add mashed bananas and vanilla extract, beat.
Combine dry ingredients in a separate bowl.
Add dry ingredients and sour cream alternately to the mixing bowl. Beat well until combined. Fold in walnuts if desired. (Some people also like mini chocolate chips).
Pour into prepared pan(s).
Bake the bundt for 1 hour 10 minutes or until a toothpick comes out clean. Bake loaf pans for 45 minutes or until a toothpick comes out clean.
Invert on a cooling rack and allow to cool. Serve with softened butter, or prepare a glaze from Confectioner's sugar and milk and drizzle over the bread. Enjoy!
